Sugar cane decaffeinated coffee utilises a naturally occurring solvent, Ethyl Acetate (EA), derived from the fermentation of sugar cane, to remove the caffeine from coffee beans. The process involves soaking green coffee beans in an EA solution, extracting the caffeine, and then steaming the beans to remove any remaining EA. The result of this process is preservation of the original flavour of the coffee, even adding a slight sweetness.
